Crock Pot Vegetable Beef Soup
1 lb grass-fed chuck roast cut into cubes
1 large onion, cut into slices
2 carrots, sliced
1 large potato, cubed
1/2 head of green cabbage, sliced
large handful of green beans, ends trimmed
5+ cups of organic beef broth (amount depends on how much you would like, make sure vegetables are covered)
2 bay leaves
2 tbs italian seasoning
Sea Salt and pepper to taste
Place in crock pot and simmer on low for 4-6 hours
