Oatmeal Blueberry Pancakes
1 1/2 cups thick rolled oats
1 tsp baking powder
1/2 tsp baking soda
1 1/4 cup almond or coconut milk
2 tbs coconut oil, melted
1 tbs maple syrup
1 small banana, slightly mashed
1/2 cup blueberries fresh or frozen
Grind oats to a fine powder. Mix together all dry ingredients. Combine wet ingredients, except for blueberries in another bowl. Add wet to dry and mix together. Fold in blueberries. Cook
